Garlic Chipotle Lime Chicken
A flavorful and spicy Instant Pot chicken recipe with the zing of lime, the smokiness of chipotle, and the richness of garlic. Perfect for a quick and healthy Paleo or Whole30 meal.
Ingredients:
- 2 lbs boneless, skinless chicken thighs
- 1/4 cup fresh lime juice
- 3 cloves garlic, minced
- 2 chipotle peppers in adobo sauce, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 1 tbsp olive oil
- 1/2 cup chicken broth
Instructions:
Season chicken thighs with cumin, smoked paprika, salt, and black pepper
Set Instant Pot to 'Saut' mode and heat olive oil
Add minced garlic and chipotle peppers, saut for 1-2 minutes until fragrant
Add seasoned chicken thighs and sear on both sides until browned
Pour in lime juice and chicken broth, deglaze the pot, scraping up any browned bits
Close the Instant Pot lid, set to 'Pressure Cook' mode for 10 minutes
Once cooking is complete, allow natural pressure release for 5 minutes, then quick release any remaining pressure
Serve the Garlic Chipotle Lime Chicken over cauliflower rice or with your favorite Paleo side dishes
