Couscous Tabbouleh Salad
Couscous Tabbouleh Salad is a delightful Middle Eastern-inspired salad that combines fluffy couscous with fresh vegetables and herbs, all tossed in a zesty lemon and garlic dressing. It's a perfect side dish or a light and healthy meal on its own.
Ingredients:
- 1 cup couscous
- 1 1/4 cups boiling water
- 1/4 cup extra-virgin olive oil
- 3 tablespoons fresh lemon juice
- 1 garlic clove, minced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup red onion, finely chopped
- Salt and pepper to taste
Instructions:
Place couscous in a heatproof bowl
Pour boiling water over couscous, cover, and let it sit for 5 minutes
Fluff couscous with a fork and let it cool to room temperature
In a separate bowl, whisk together olive oil, lemon juice, and minced garlic
Add cherry tomatoes, cucumber, parsley, mint, and red onion to the couscous
Pour the dressing over the couscous mixture and toss to combine
Season with salt and pepper to taste
Chill in the refrigerator for at least 30 minutes before serving
Serve cold as a refreshing salad
