Ginger Salmon with Cucumber Lime Sauce
Ingredients:
- 4 salmon fillets
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon grated ginger
- 2 cloves garlic, minced
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Cucumber Lime Sauce:
- 1 cucumber, finely diced
- Juice of 2 limes
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon rice vinegar
- 1 teaspoon honey
- Salt and pepper to taste
Instructions:
Warm up the grill over medium-high heat
Mix soy sauce, honey, grated ginger, minced garlic, sesame oil, salt, and pepper in a small bowl
This will make the marinade
Pour the marinade over the salmon fillets in a plastic bag that can be closed again
Put the bag in the fridge for at least 30 minutes with the lid on
Prepare the Cucumber Lime Sauce while the salmon is marinating
In a bowl, mix the diced cucumber, lime juice, chopped cilantro, rice vinegar, honey, salt, and pepper
Put it in the fridge until you're ready to serve it
Grab the salmon from the marinade and put it on the grill
Cook each side for 4 to 5 minutes, or until the salmon is fully cooked and has grill marks
Put a lot of Cucumber Lime Sauce on top of the grilled salmon before serving
If you want, you can add more cilantro and lime wedges as a garnish
