Creamy Chicken & Rice Soup



An easy-to-do soup that is rich and creamy, with slow-cooked chicken, hearty rice, and flavorful vegetables.

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 cup uncooked white rice
  • 4 cups chicken broth
  • 1 cup water
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup heavy cream
  • 2 tbsp cornstarch
  • 2 tbsp cold water

Instructions:

Put chicken, rice, water, chicken broth, celery, onion, garlic, thyme, parsley, rosemary, salt, and black pepper in a slow cooker

Set the cooker to low for 6 to 8 hours or high for 3 to 4 hours

Remove the lid and cook until the chicken is fully cooked and the rice is soft

Heavy cream, cornstarch, and cold water should be mixed together in a small bowl until the mixture is smooth

During the last 30 minutes of cooking, stir the cream mixture into the soup

Serve the soup hot and enjoy!
